Last week, I had the privilege to step inside the premier Nobu Restaurant located inside Nobu Hotel Manila of the newly-opened City of Dreams Manila entertainment hub in Pasay City.
It was a breakfast meet-up with Marlon Hirsh, General Manager, Nobu Hotel Manila, who sat down with us, guest bloggers, during the entire breakfast.
It was not just a breakfast presentation of Nobu Restaurant’s signature dishes but also a time to know more of Nobu Hotel Manila shared by our wonderful host, Marlon Hirsh.
Before we started to scoop our way to the buffet station, Marlon already gave some tips and proudly mentioned that they serve the best French Toast no other hotel restaurants have ever offered. I’ll get back to that.
Nobu Restaurant is a contemporary fine dining venue with 335 seats. It includes two private dining rooms, a sushi bar, floating water cabanas, two Teppanyaki tables, and a Chef‘s table.

Interestingly, Nobu Hotel was inspired by the well-renowned Japanese culinary genius, Chef Nobu.

Nobu Hotel Manila Rooms and Suites
Guests can choose from a Deluxe Room, a Premier or Corner Room, and Executive Room or treat themselves to a Nobu Suite. Each room is crafted with custom-made calligraphy art, representing Chi, or the flow of energy, while a custom-made Cherry Blossom mural on silver leaf paper can be found in the Nobu Suites.
The Spa & Recreational Facilities
For additional pampering, Nobu Fitness & Spa is exclusively available for hotel guests. A 23.2-meter long swimming pool is also available.

The Nobu Restaurant Breakfast Specialties include Yuzu Soba Pancakes, Green Tea Waffles, Eggs Matsuhisa, Bagel and Lox, Breakfast Tobanyaki, Salmon, and Egg Donburi.
Signature Dishes include Toro Tartar with Caviar, Yellowtail Sashimi with Jalapeno, Whitefish Tiradito Style, Salmon New Style, Rock Shrimp Creamy Spicy, Squid Pasta, Black Cod Miso, Beef Tobanyaki, and Bento Box Dessert.
Signature Cocktails: Matsuhisa Martini, Pins Martini, Mango Passion, Mia Margarita, Yamasaki Sidecar, Lychee Martini, and Champagne 95.
As I’ve mentioned, Marlon told raved about their French Toast. So after finishing off our breakfast meal, each one of us had a single serving of the French Toast and yes, it is different from the regular French Toast that we’ve had.
Nobu Restaurant’s French Toast deserves to be on top of the search list should anyone look for the perfect breakfast meal and dessert. This French Toast reminded us of our very own bibingka. It has the creamy flavor and fluffy texture that melts as soon as it cascades in the mouth. The lingering flavor will make you ask for a second round. Or another until you surrender.
Marlon appreciated our fondness to the French Toast and told us that Nobu Restaurant’s dishes , particularly their desserts, were fused with Filipino touch and flavors to complement to every Pinoy palate when it comes to new and unique dishes. All of these are prepared under Executive Chef Zachary Hillberry.
Aside from the French Toast, we also tried Miso Muffin and the Green Tea Waffles, which also have that flavorful taste that you’ll keep coming back for more.
I’ve also tried the Hot Chocolate that has a thick, rich, and creamy flavor. It’s a perfect starter before jumping at the buffet station.
Nobu Restaurant is located at Level 1 Pool Deck, Nobu Hotel Manila. It is open from 6 AM – 10 AM on weekdays; until 11 AM on weekends; and 6 PM – 11 PM.
Nobu Restaurant is dedicated exclusively for Nobu Hotel Manila guests only. Guests will have to register their room numbers once they enter the restaurant.
Table and seats inside the restaurant have great designs. Furniture and lounges are fantastic, especially the cabana style table area.
From the pool deck, you can view the vast waters of South China Sea. The Golden Dome of City of Dreams Manila adorned the equally great architectural design of Nobu Hotel Manila.
